The RFOT from MadgeTech Inc., Warner, NH, is a wireless meat cooking and cool-down data logger with a flexible piercing probe. The device logs a temperature reading and transmits it, wirelessly, to a central computer for real-time monitoring. Probe temperature range is –50°C to 200°C, operating temperature range is –30°C to 100°C, and the logger carries an IP67 rating. Logging software is available from the company's Web site and includes a cooling flags function that highlights the FSIS Appendix B cool-down temperatures and calculates the cool-down duration.
